This time, the restaurant joins forces with Melbourne-based culinary collective Adobros, led by Chefs Michael Pastrana and Morris Danzen Catanghal, to reimagine iconic Filipino dishes with a distinctive Australian twist.
The latest edition of this culinary series continues Guevarra’s mission of elevating Filipino flavors on the world stage. The collaboration with Adobros is a fusion of shared heritage and contemporary inspiration, blending Filipino nostalgia with modern culinary techniques and ingredients drawn from Australia’s multicultural palate.

The partnership was sparked by a chance meeting in Melbourne, where Chef Roland Laudico and the Adobros team discovered a shared passion for advocating Filipino cuisine internationally. That conversation evolved into a creative alliance aimed at reshaping how the world experiences traditional Filipino fare.
“This partnership marries time-honored Filipino recipes with contemporary ingredients and techniques. By incorporating local produce and cooking styles, we want to create dishes that are both rooted in tradition yet modern. Guests can expect an elevated buffet experience featuring beloved Filipino dishes like Tinola and Afritada, reimagined using Mediterranean, Italian, and Australian influences. Each plate serves as a narrative — an homage to memory, movement, and the adaptability of Filipino cuisine.
